Jiro-Style Ramen: Broth, Noodles, Toppings and Origin

Jiro-style is ramen as a mountain: a huge portion of thick noodles under a heap of boiled bean sprouts and cabbage, slabs of pork, raw garlic and back fat, in a salty pork-and-soy soup. It is the heaviest mainstream style in Japan and the one most often misunderstood as a “challenge” — it is a cult, with its own ordering language.

What to expect. A brown, emulsified pork soup with strong shoyu; very thick, flat, chewy noodles; “yasai” (vegetables), “ninniku” (garlic), “abura” (back fat) and “karame” (extra tare) called out when you are asked; pork cut thick rather than sliced.

🍲 1. Broth and tare

Pork bones and pork cuts boiled with soy tare and MSG-forward seasoning; back fat is spooned on top. It is deliberately salty and fatty. See ramen broth and MSG and umami in ramen.

🍜 2. Noodles and toppings

Thick, wide, low-hydration noodles in large portions; toppings are bean sprouts, cabbage, pork and garlic rather than egg and nori. See ramen noodles.

📜 3. Origin

Ramen Jiro opened in Mita, Tokyo in 1968 near Keio University as a cheap, filling student bowl; “Jiro-kei” now describes dozens of related and inspired shops.

🇭🇰 4. In Hong Kong and at home

Hong Kong has had Jiro-inspired shops and the term draws about 660 local searches a month; confirm current operation before travelling and see Hong Kong ramen restaurants and chains. The ordering call is explained in the ramen glossary.

Portion and sodium are extreme. A standard Jiro bowl can exceed a day’s sodium and most of a day’s calories; it is not a bowl for anyone managing blood pressure. See ramen and high blood pressure.
