Ajitama: The Marinated Ramen Egg

Ajitama (ajitsuke tamago) is a soft-boiled egg peeled and steeped in a soy-mirin marinade until the white is seasoned and the yolk stays jammy. It is the most-ordered extra on Hong Kong ramen menus and the one most often done badly at home.

The numbers that matter. Fridge-cold large egg into boiling water for 6½–7 minutes, straight into iced water, peel, then marinate 4–24 hours in equal parts soy and mirin with a little water. Serve halved, at room temperature or warmed by the broth.

🥚 1. Why it works

The marinade seasons the white and firms the yolk’s surface while the centre stays liquid; shops often reuse chashu braising liquid, which is why the egg tastes of the pork. See chashu and ramen tare.

⏱️ 2. Timing and peeling

Older eggs peel more easily; a pinprick in the round end reduces cracking; the ice bath stops cooking and shrinks the white from the shell. Full chart in the ramen egg recipe.

🧂 3. Sodium and allergens

An egg adds protein and a little sodium from the marinade; egg is a major allergen and appears in some noodles too. See ramen allergens.

🇭🇰 4. Ordering in Hong Kong

Ajitama is usually a paid extra (reported at HKD 15–20 at the Japanese imports); on a sheet it is “ajitama” or “tamago”. Price context is in Ichiran price tier and add-ons; toppings generally in ramen toppings.

Soft-boiled egg is undercooked egg. Hong Kong’s Centre for Food Safety advises that raw or undercooked eggs can carry Salmonella and that susceptible groups — pregnant women, young children, older people and the immunocompromised — should eat eggs cooked until the yolk is firm; keep marinated eggs at 4°C or below and eat within a few days. See ramen during pregnancy and ramen food safety.

❓ FAQ

How long do ajitama keep? Refrigerated in marinade, two to three days; the yolk firms over time.

Can I use pasteurised eggs? Yes; pasteurised shell eggs reduce the Salmonella risk for soft yolks.

Why is my yolk grey? Overcooked; reduce time by 30 seconds or start with colder eggs.
