Chashu: Pork Cuts, Styles and Ordering Terms

Chashu is the braised or roasted pork on a bowl of ramen — rolled belly, flat belly, shoulder or loin — simmered in soy, sake, mirin and sugar until it slices cleanly. Despite the Cantonese-looking name, Japanese chashu is braised, not roasted red like Hong Kong char siu.

Four cuts, three styles. Rolled belly (classic, fatty). Flat belly (layered, easy to sear). Shoulder (kata-rosu) (leaner). Loin (rare, low-temperature “rare chashu”). Styles: braised, flame-seared (aburi) and low-temperature pink. Order “chashu-men” for extra slices.

🐖 1. Cuts

Belly gives the melting texture most shops aim for; shoulder is the leaner, meatier choice; low-temperature loin or shoulder gives the pink slices seen at modern shoyu counters. The topping set is in ramen toppings.

🍶 2. Braising liquid

Soy, sake, mirin, sugar, ginger and spring onion; many shops then use the braising liquid as the base of their shoyu tare and to marinate ajitama eggs, which is why a shop’s pork, egg and soup taste related.

🔥 3. Aburi and rare chashu

Aburi chashu is torched before serving for smoke and rendered fat; rare chashu is cooked low and sliced thin and should be from a kitchen that controls temperature carefully. See the food-safety note below.

🏠 4. Chashu in a Hong Kong flat

No oven needed: a lidded pot on an induction hob braises a 500 g rolled belly in about 90 minutes, and the liquid becomes next week’s tare. Recipe in chashu for Hong Kong flats; the siu mei shortcut is in the cooking hub how to make ramen at home.

Pink pork needs a trusted kitchen. Low-temperature “rare chashu” relies on precise time-and-temperature control; pregnant women and immunocompromised diners should choose fully braised pork. See ramen food safety.
