Ramen Toppings: Menma, Nori, Kikurage and Narutomaki

Decode ramen toppings through their names, ingredients and role in the bowl before choosing extras.

Ramen Toppings: Menma, Nori, Kikurage and Narutomaki

Beyond chashu and egg, the classic ramen toppings each have a job: menma for crunch and funk, nori for sea aroma, kikurage for texture, narutomaki for colour, negi for bite. Knowing which toppings belong to which style tells you a lot about the bowl before you taste it.

Topping sets by style. Tokyo shoyu: chashu, menma, nori, naruto, negi, spinach. Hakata tonkotsu: chashu, kikurage, negi, pickled ginger, sesame. Sapporo miso: bean sprouts, cabbage, corn, butter, minced pork. Iekei: three nori sheets, spinach, chashu. Mazesoba: mince, yolk, chives, garlic, fish powder.

πŸŽ‹ 1. Menma

Fermented, simmered bamboo shoots seasoned with soy and sesame oil; crunchy and faintly sour. A sign of a careful shop is menma that tastes of something other than salt.

🌊 2. Nori and narutomaki

Nori adds sea aroma and softens into the soup; in iekei you dip it and wrap rice. Narutomaki is the white fish-cake slice with the pink spiral, named after the Naruto whirlpools; it is decorative and mild. See iekei ramen.

πŸ„ 3. Kikurage, corn, butter, negi

Kikurage (wood-ear mushroom) gives crunch to tonkotsu; corn and butter are Hokkaido additions; negi (spring onion) is white or green depending on the shop, and raw onion appears on niboshi bowls. See Hakata ramen and Sapporo miso ramen.

πŸ₯š 4. The two toppings with their own pages

Pork and egg carry most of the cost and most of the technique: chashu and ajitama. Counter condiments β€” garlic press, pickled ginger, takana, sesame, vinegar β€” are covered in the ramen glossary.

Toppings are allergen carriers. Narutomaki is fish; menma may contain soy and sesame; nori can be processed with shellfish. See ramen allergens.
