Mazesoba: Broth, Noodles, Toppings and Origin
Mazesoba is brothless ramen: thick noodles tossed at the table with tare, flavoured oil, minced pork, raw yolk, garlic, chives and nori. There is no soup to drink, so it is the ramen format with the lowest total sodium per meal — and the richest per bite.

What to expect. A warm bowl of thick noodles under a layer of spicy minced pork, chives, spring onion, garlic, nori, fish powder and a raw egg yolk; you mix everything hard before eating and finish the last sauce with a spoon of rice (oimeshi).
🍲 1. Broth and tare
The “broth” is a few spoonfuls of tare and aroma oil at the bottom of the bowl — usually soy, chilli and pork-fat based — that coats the noodles once mixed. Because the seasoning is not diluted by soup, mazesoba tastes stronger than ramen even though you consume less liquid. See ramen tare and aroma oil.
🍜 2. Noodles and toppings
Thick, chewy noodles cooked soft enough to hold sauce; toppings are the point: Taiwanese-style spicy mince, chives, garlic, nori, fish powder, yolk. See ramen toppings.
📜 3. Origin
The modern “Taiwan mazesoba” was created in Nagoya around 2008 at Menya Hanabi, reportedly from a failed Taiwan-ramen experiment; the older brothless lineage is abura soba from 1950s Tokyo, covered in abura soba.
🇭🇰 4. In Hong Kong and at home
Kokoro Tokyo Mazesoba made the format a Hong Kong fixture, with shops in Wan Chai, Sha Tin and Tsuen Wan on its local site; see Kokoro Tokyo Mazesoba. The decision page is mazesoba versus ramen and the home version mazesoba in 20 minutes.
Raw yolk is part of the dish. Pregnant women, young children and anyone avoiding raw egg should ask for the bowl without it; see ramen food safety.
❓ 5. FAQ
Is mazesoba the same as abura soba? Related but not identical: abura soba is soy-and-oil led; mazesoba adds spicy mince and more toppings.
Is it healthier than ramen? Lower total sodium because there is no soup; higher fat per bite. See ramen calories.
Can it be delivered? It is the best-travelling ramen format.
