Vegan Ramen Styles: Broth, Noodles, Toppings and Origin
Explore vegan ramen styles by checking broth, seasoning, oil, noodles and toppings rather than trusting a vegetable label.
Vegan Ramen Styles: Broth, Noodles, Toppings and Origin
Vegan ramen is a family of styles, not a single substitute bowl: kombu-and-shiitake clear broths, soy-milk “paitan”, miso-sesame soups and brothless mazesoba all have Japanese precedents. The hard part in Hong Kong is not the recipe but the menu — many “vegetable ramen” bowls still sit in pork or chicken stock.

The four vegan styles. Kombu-shiitake shio or shoyu (clear, light). Soy-milk paitan (creamy, tonkotsu-like). Miso-sesame (rich, nutty). Vegan mazesoba (brothless, no soup to worry about). Each solves the “where does the body come from” problem differently.
🍲 1. Broth and tare
Umami comes from kombu, dried shiitake, roasted vegetables and fermented seasonings instead of bones; soy milk or blended cashews give creaminess; miso and sesame give weight. Tare must be checked too — bonito-based dashi and some shoyu blends are not vegan. See ramen broth and ramen tare.
🍜 2. Noodles and toppings
Most ramen noodles are flour, water and kansui and contain no egg, but some fresh brands add egg; check the pack. Toppings: fried tofu, grilled king oyster mushroom “chashu”, menma, corn, spinach, nori, chilli oil. See ramen noodles and ramen toppings.
📜 3. Origin
Japanese temple cuisine (shojin ryori) has long used kombu-shiitake dashi; dedicated vegan ramen shops are a 2010s development in Tokyo and Kyoto driven by tourism, and the soy-milk paitan is the format that spread fastest.
🇭🇰 4. In Hong Kong and at home
Hong Kong shops and the questions to ask are in vegan and vegetarian ramen in Hong Kong; Ramen Iroha lists vegetarian bowls but confirm stock and egg before ordering. The home recipe is vegan ramen broth with kombu and shiitake.
“Vegetable ramen” is often not vegetarian. Ask what the stock is made from and whether the tare contains fish; for religious or allergy needs, also ask about shared pots. See ramen allergens.
