Yuzu Shio Ramen: Broth, Noodles, Toppings and Origin
Understand yuzu shio ramen through citrus, seasoning and broth without treating fragrance as a nutrition claim.
Yuzu Shio Ramen: Broth, Noodles, Toppings and Origin
Yuzu shio ramen is a clear, salt-seasoned chicken-and-dashi bowl lifted with the peel or juice of yuzu, the Japanese citrus. It is the lightest Japanese-import bowl in Hong Kong and the one Afuri built two branches on.

What to expect. A pale, almost transparent soup; a sharp citrus aroma before the first sip; thin straight noodles; flame-seared chashu, menma, mizuna greens, nori and a half soft egg. Lower in fat than any tonkotsu, but still salt-seasoned.
π² 1. Broth and tare
The stock is chicken, kombu and dried fish simmered clear (chintan); the tare is salt with kombu and often a little white soy; yuzu is added as zest, juice or an infused oil at the finish so the aroma stays bright. Tare theory is in ramen tare and the clear-stock method in ramen broth.
π 2. Noodles and toppings
Thin, straight, low-hydration noodles that suit a light soup; toppings are restrained so the citrus shows: seared chashu, menma, mizuna, nori, half an ajitama. See ramen noodles and ramen toppings.
π 3. Origin
Yuzu-accented shio bowls appear across modern Tokyo ramen, but Afuri β founded in Ebisu in 2003 and named after Mount Afuri in Kanagawa, whose spring water the brand cites β made yuzu shio its signature and exported it. Shioβs wider history is in shio ramen.
ππ° 4. In Hong Kong and at home
Afuriβs own locations pages list Hysan Place in Causeway Bay and The ONE in Tsim Sha Tsui, both 12:00β22:00 daily; see Afuri Hong Kong. At home, make the shio tare and add a strip of yuzu peel or a few drops of bottled yuzu juice from a Japanese supermarket; the base recipe is easy shoyu ramen in 30 minutes with the tare swapped.
Light is colour, not salt. Shio tare is salt-dense; yuzu shio is lower in fat than tonkotsu but not necessarily lower in sodium. See ramen sodium and the decision in shoyu versus shio.
